Twice Baked Potatoes

1 potato for each person plus one extra for filling.   Choose nice, big, baking potatoes the kind you buy loose in the bin, not the bags of small potatoes.   You want a nice big "boat" to fill with potato!

To make enough for 4 people:
5 baking potatoes
1 cup Half and Half
1 half stick butter (not margarine)
4 ounces sour cream
4 ounces shredded Chedder Cheese
Tabasco
Salt
Pepper
Paprika

Preheat oven to 400 degrees.

Rub potatoes with vegetable oil, poke holes in them with a fork and bake in the oven for an hour.   Remove and set aside to cook slightly.

Warm Half and Half and butter in a saucepan until butter is melted, do not boil, add a couple of splashes of Tabasco and salt and pepper.

With a sharp knife cut potatoes in half and carefully scoop out the contents being careful not to tear skins.   Save the skins.

Take the bowl of potatoes and mash with a potato masher while slowly adding warm half and half.   Whip with a mixer as you would mashed potatoes but don't over whip. 

Mix in cheese and sour cream.

Fill the potato shells with the mixture.   5 potatoes will yield 8 nicely filled half shells.  Sprinkle lightly with Paprika.

The steps above can be done the day before to save time and then place the filled shells on a baking sheet and cover with foil until ready to reheat.

Heat in a 350 degree oven for about 15 to 20 minutes until warm.
