Quiche

Frozen Pie Shell (leave frozen)
4 eggs
1 cup Half and Half
5 ounces shredded Swiss Cheese
3 ounces shredded Cheddar Cheese
1 small onion
Chives
4 strips of bacon (or substitute 1/4 inch cubes of ham or spinach)
Pepper
Tabasco

Preheat oven to 400 degrees.

Brown bacon until crisp in a frying pan.  Set aside.

Do a small dice of the onion.

Mix eggs and Half and Half and chives.   Add a little pepper and a couple of dashes of Tabasco.  Stir in chives.

Crumble bacon and mix together in a bowl with the cheeses and chopped onion.   Pour this mixture into the frozen pie shell.   Pour egg mixture overtop.  

Cook for 15 minutes at 400 degrees, then reduce heat to 350 degrees and cook for an additional 35 minutes.   Should be lightly brown on top.

Remove from oven and let rest for about 10 minutes before serving.   It will settle slightly.
