Pork Roast

2 lb. Boneless Pork Roast
Ingredients of rub:
2 tablespoons Dijon Country Mustard
2 tablespoons Brown Sugar
A dash of Worcestershire
A couple of pinches of dried Rosemary

Preheat oven to 325 degrees.

Coat entire roast with the rub mixture.   Note, this can be done hours in advance, it will act as a marinade and improve the flavor!  Place in roasting pan.   Lightly salt and pepper.

Cook until instant read thermometer inserted in thickest part registers 155 degrees, about        40 minutes a pound, but oven temperatures vary so check with a meat thermometer. Slow roasting pork makes for juicy, succulent meat!   Don't raise the cooking temperature to get it done faster, the meat will be dry and tasteless!!  Be Patient!

Remove from oven, cover lightly with aluminum foil and let rest for 10-15 minutes, lightly covered with a tent of foil, before you cut it.  If you cut it too soon all of the juice will run out!
