Meatloaf

1 to 1 1/2 pounds meatloaf mix (ground beef and ground pork or veal)
1 1/4 teaspoons salt
1/4 teaspoon ground black pepper
1 small diced onion
1/2 cup diced bell pepper
1 egg, lightly beaten
8 ounces canned diced tomatoes with juice
1/2 cup cracker crumbs or bread crumbs

Topping:
1/3 cup ketchup
2 tablespoons brown sugar
1 tablespoon Dijon Country Mustard

Preheat oven to 375 degrees F.

Mix all meatloaf ingredients well and place in a baking dish. Shape into a loaf (if you put the whole thing in a loaf pan to shape it you can then just turn it upside down into the baking dish for a perfect loaf shape).

Topping:
Mix ingredients for topping and spread on entire loaf. Bake for 1 hour.
