Chicken Casserole About 1 1/2 to 2 pounds chicken Preheat oven to 350 degrees. If using leftover chicken roast for the chicken just cut into bite sized pizzas, if using fresh chicken breasts, you will need to cook them first and then cut into pieces. In a medium sized casserole, combine cream of chicken soup and sour cream and stir together well. Add chicken pieces. Place Ritz crackers in a plastic zip lock bag and crush into large crumbs. Melt butter in microwave or oven and pour into bag with crackers. Spread the buttery cracker crumbs over the top of the casserole. Bake in the oven for approximately 30-35 minutes until casserole is starting to bubble around the edges. Start rice when about 20 minutes left for the chicken to cook. Serve over rice.
